Boil chestnuts in water with sugar. Bring to boil, cover and simmer until the nuts are barely tender, about 1 hour. Drain, reserving the syrup. Run the nuts through a food mill or processer in batches, just until grainy. Stir in the remaining ingredients. Set aside. Prepare the whipped cream by beating cream and vanilla to soft peak stage. Slowly add confectioner’s sugar and continue beating to the stiff peak stage. Gently fold half of the whipped cream into the chestnut mixture. Place mounds on serving places, to look like a mountain. Cover the mountain with the remaining whipped cream and garnish with a sprinkle of nutmeg or cinnamon or a piece of fresh fruit.
